Fröserhof - Family Wibmer

Matrei in Osttirol

"Tiroler Graukäse" is a protected product in accordance with the EU designation of origin. It is a lean sour cheese made from Tyrolean cow's milk. It is produced at the Fröserhof according to an old tradition. Thermal treatment (pasteurization) is deliberately avoided during refinement. This preserves all the positive characteristics of high-quality raw milk. Mathias Wibmer needs 15 liters of mainly hay milk to make 1 kilogram of grey cheese. A great deal of experience and the tip of his fingers result in this characteristic, regional delicacy. The production of sour cream butter is no less difficult.
